Whether you’re treating yourself or someone special, Chef Ryan's Decadent High-Protein Chocolate Mousse is sure to be a showstopper! This rich, creamy delight will satisfy your sweet tooth while keeping you on track with your health goals—because at Sweet Pea Plant-Based Kitchen, we believe delicious and nutritious should always go hand in hand.

Why You'll Love This Recipe

This mousse isn’t just any dessert; it’s packed with plant-based protein, making it the perfect way to enjoy something sweet without the guilt. If your personal goals include increasing protein intake while enjoying satisfying treats, this recipe is your new best friend.

Ingredients:

  • 1.5 cups chocolate chips (use any variety you prefer; we are using 72% dark cocoa in this YouTube video showcasing our black bean brownies and chocolate mousse!)

  • 1 container ROOM TEMPERATURE silken tofu

  • 2 tbsp vanilla extract

  • 2 tsp cinnamon

  • 1 tsp salt

  • 2 tbsp maple syrup (adjust to taste)

  • Fresh fruit like raspberries, blueberries, strawberries, or orange slices for serving

How to Make It:

  1. Double Boil the Chocolate – Set up a deep pot and bring water to a slight boil. Place a bowl on top of this pot, ensuring it does not touch the water or sink. Add the chocolate chips into the bowl and let them melt, stirring occasionally. Continue stirring until all chocolate chips have fully melted.

  2. Puree the Base – While the chocolate is melting, blend silken tofu, vanilla extract, cinnamon, salt, and maple syrup in a blender until completely smooth.

  3. Mix with Chocolate – Gently fold the tofu puree into the tempered melted chocolate, stirring until fully combined.

  4. Chill & Set – Transfer the mousse into serving glasses or ramekins and refrigerate for at least an hour to let the flavors meld and the texture set.

  5. Garnish & Serve – Top with fresh fruit like raspberries, blueberries, strawberries, or orange slices for an extra burst of flavor.
