- 100g Parsnip, diced
- 75g Celery Root, diced
- 125g Pumpkin, diced
- 15g Garlic, minced
- 15g Ginger, minced
- 75g Apple, diced and tossed with 15g Lemon Juice
- 900g Vegetable Stock
- 700g Almond Milk
- 100g Cooked Brown Rice
- 100g Cooked Chickpeas
- 15g Cilantro

- Toast the Curry Powder: Heat a 4-quart soup pot over medium heat. Toast the curry powder for 2 minutes until fragrant.
