Black Bean Brownie Recipe
Ingredients:
- 500g black beans (rinsed if using canned)
- 180g orange juice
- 120g water
- 40g maple syrup
- 210g coconut sugar
- 10g vanilla extract
- 5g cinnamon
- 32g ground flax seed (see note below for egg substitute)
- 3g salt
- 15g baking powder
- Optional 5g instant espresso
- 90g almond butter
- 145g cocoa powder
- 115g chocolate chips
- 115g toasted cashews or almonds

Instructions:
- Preheat your oven to 350°F (175°C). Line a baking dish with parchment paper.
- In a food processor, combine the black beans, orange juice, water, maple syrup, coconut sugar, vanilla extract, cinnamon, ground flax seed, salt, baking powder, and optional instant espresso. Slightly puree to break up the black bean chunks.
- Add the almond butter, cocoa powder, chocolate chips, and toasted cashews or almonds to the food processor. Process until smooth and well combined.
- Pour the brownie batter into the prepared baking dish and spread evenly.
- Bake for 20-25 minutes, or until a knife inserted into the center comes out clean.
- Allow the brownies to cool before slicing. For an extra treat, serve with our homemade chocolate mousse!
